Projects I flaked on and my shitty flimsy excuses

A month into quarantine, I haven’t cooked nearly as much as I expected. We did do a lot of braises and fun recipes that I would normally not have the mental fortitude to tackle on a work night, but nothing involved, nothing crazy.

A lot of times I wake up with the intention of tackling a project, but end up realizing that I don’t have an ingredient that I’d prefer to use (like eggs right now. We’re out. of eggs.) or by the time my coffee kicks in I’m still groggy and it’s already afternoon. Also we’re out of coffee right now. Tomorrow will be interesting.

A small percentage of things I have thought about making, genuinely want to, but ultimately decided not to this past month:

  • Quesadillas to use up 5lb of cheddar, but we don’t have flour tortillas, so also flour tortillas

  • Boba from scratch (although I did make the “quick cooking” boba and enjoyed my milk tea!)

  • Custard buns

  • Macarons with leftover whites, except then I’d have to use more ingredients for the filling #lazy

  • Chocolate candy, because I bought a mold and 5lb of chocolate in anticipation of quarantine boredom

  • Ramen flavored soup dumplings, from leftover gelatinous ramen stock

  • Lemongrass pork skewers -> summer rolls or wraps

  • Banh Xeo

  • Pad see ew / char quay teow / beef chow fun with home made rice noodle + our abundance of chard / kale, etc

  • Croissants? Except not really. The thought crosses my mind once a day or so until I remember the last time my coworker and I did it at work, after not making them for like five years.

  • Scallion pancakes, because we have a lot of scallions

But really, my big problem is… who will eat them??? I still hate leftovers. That’s probably the biggest issue. But on the upside, we aren’t spending any money on eating out, or lazily getting coffee at Kaldi’s. I just ordered 5lb of Stumptown. So we’re splurging on ingredients that probably cost more than the finished dish would be in a restaurant. It’s fun though. Beats sitting in front of the computer all day. Without my physically demanding job, I’m getting fat :(
